Is there a way to figure out how much your quilt will "shrink" during the quilting process given a certain kind or weight of batting, how closely it's quilted, etc.?

yes, it shrink some like 1/4 or a little more to shrink and the batting do shrink to make it a little flatter than the usual batting! The fabric is important to wash first before starting to sew because it will do better as it is a preshrink !

THE AMOUNT OF SHRINKAGE DUE TO STITCHING IS DIRECTLY RELATED TO THE SIZE AND QUANTITY OF QUILTING STITCHES. 6-8 st/in
won't cause much,if any, shrinkage. 12+st/in. quilted .25" apart(heirloom) will definately take an inch or two off a queen size.

If you pin or base your quilt well before you start to do your quilting - whether it be by hand or machine or even tied you should not have any significant "shrinkage". Your quilt should maintain the same size at it was when you finished the top construction.
